Blueberry Coffee Cake


On the Eleventh Day of Treats, I baked for our work holiday potluck...

11 Slices of Blueberry Coffee Cake

10 Pieces of Cheesecake

9 Magic Cookie Bars

8 Loafs of Banana Bread

7 Pieces of Shortbread

6 Apple Pies

5 Lemon Bars

4 Squares of Fudge

3 Butter Cookies

2 Pumpkin Pielets

And a recipe for Jewy Chewy Treats.

Fresh blueberries don’t really do anything for me. I find them to be a boring fruit. Now cooked/baked blueberries, that is a completely different story. I LOVE baked blueberries. They are the perfect combo of tart and sweet and are so beautiful. I would never order pancakes at a restaurant. But, if there are blueberry pancakes I am totally sold.

On our final work day of 2010, our department is having a holiday potluck. Instead of making something for the potluck AND something for the Twelve Days, I opted for a combo. So blueberry coffee cake it is.

For the cake you will need:
1/4 cup butter
3/4 cup white sugar
1 egg
1/2 cup milk
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups blueberries

For the crumble topping you will need:
1/2 cup brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/2 cup chopped pecans
3 tablespoons butter

Start by preheat oven to 375 degrees. Grease and flour a 9 inchpan. I bought a brand new pan I honor of my last night of baking. Isn’t she pretty?


Sift together the flour, baking powder and salt and set it aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg.
You would think I would be tired of pictures like this after eleven days, but clearly I am not.


Beat in the flour mixture alternately with the milk, mixing just until incorporated.


Then stir in the blueberries.


Pour the batter into the prepared pan and spread it evenly.


In a small bowl, combine brown sugar, 3 tablespoons flour, cinnamon and chopped pecans. Cut in butter until crumbly. This basically means you stab the butter over and over with your spoon until it crumbly. Quite therapeutic.




Finally, sprinkle the crumble over the batter and bake it for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow to cool and serve.

Our potluck doesn’t start till 11:30. Chances of their being coffee cake left at that time are slim to none.
