9 Magic Cookie Bars
8 Loafs of Banana Bread
7 Pieces of Shortbread
6 Apple Pies
5 Lemon Bars
4 Squares of Fudge
3 Butter Cookies
2 Pumpkin Pielets
And a recipe for Jewy Chewy Treats.
First of all, I have three very important things to tell you.
1. Rain boots are possibly the best invention ever. It has been raining for four days straight in “sunny” southern California and had I not been wearing my adorable rain boots with bubbles and fishies on them, I would have been miserable.
2. I have used more sugar, butter and flour in the last nine days then I have in the entire seventeen months I have lived in this apartment.
3. My very eligible and very single friend Patrick gave me this recipe. He cooks, he bakes and oh ya, he’s single. He likes long walks on the beach and wants me to give you his number.
I know you think I’m kidding. But I’m not.
When Patrick asked me to make these for the Twelve Days, I was a little skeptical. For some reason anything with “magic” in the name gives me a sneaking suspicion that they aren’t quite what they seem.
But, Magic Cookie Bar’s are as straightforward as a Cookie Bar comes. They smell like fresh chocolate chip cookies and taste like heaven.
You will need:
½ cup butter
1 ½ cup graham cracker crumbs
1 can (14 ounces) sweetened condensed milk (eagle brand works great)
1 cup semisweet chocolate chips
1 cup shredded coconut
1 cup chopped pecans
I know you will be shocked, but you need to preheat the oven to 350 degrees. Then melt the butter into a 13 x 9 inch baking pan.
Sprinkle the cracker crumbs evenly over the melted butter.
Then pour the sweetened condensed milk evenly over the crumbs. By the way, have you ever used condensed milk? Not sure what I expected, but it definitely was not what I expected.
Then, spread the remaining three ingredients evenly over the base. Finally, press down the mixture till it is firm.
Bake for 25 to 30 minutes or until lightly browned.
Let the bars completely cool before cutting. Otherwise they will become crumbly. Like mine. Fail.
Good thing the flavor was a success.
And I’m really not kidding about Patrick. He is single and he does want you to give him a call. Maybe he’ll make you some magic treats.
