No, not the US version of the X-Factor.
Pomegranate season.
They might be messy and hard get to, but once you get those little seed suckers out, you have a ton of little flavor bombs on your hands.
The best part about pomegranate season, is going to Pinkberry and getting a medium original flavor smothered in delicious, ruby red, sparkling pomegranate seeds.
Seriously. Every bite is a mouthful of goodness. Each time you bite into a seed, there is a major flavor explosion.
The second best part about pomegranate season, is putting pomegranate in my salads.
Even more flavor bombs.
Not only does this salad have the bombs, it has the juice of the bombs. The poms. Well, Pom Juice.
Whatever, it’s Friday. You get the idea.
You will need…
1 pack of your favorite lettuce (I like the baby greens or spring mix)
¼ cup pepitas (pumpkin seeds)
Seeds from 1 pomegranate
1 avocado, cut into pieces
2 green onions, chopped
For the Vinaigrette…
1/4 cup POM Wonderful juice
1/4 cup fresh lemon juice
1/4 cup sugar
1/2 cup olive oil
1 teaspoon salt
1 teaspoon freshly ground pepper
Start by combining all of your salad ingredients in a large salad bowl.
In a small bowl or food processor, combine all of the vinaigrette ingredients.
Blend or whisk until they are completely combined.
Drizzle the dressing over the salad, toss and serve.
Then watch as it disappears.
