Roast Salmon with Cauliflower Pure and Pickled Fennel and Radish Salsa

While traveling is a complete joy and an education for the soul, it is always nice to be home.

I’m back in my own bed and fully recovered from the body confusing jet lag.

My trip with my brother Albert to visit our brother Joshua in Budva, Montenegro (a stunning Adriatic costal town in the middle of nowhere) and my true soul mate, Jeanelle, in the Netherlands was a smashing success.

Days were spent on cultural and foodie adventures. Nights were spent drinking well, eating even better and catching up on lost time with two of my favorite people on the planet.

The best days in each country are a no brainer.

In Montenegro, my brother’s and I rented a bright read Toyota Yaris for a windy ride up a mountain to the snow in the Lovcen national park for some sweet views and family photos.



On the way back down the mountain we stopped in the remote village of Njegusi. A small town in the mountains behind Kotor, they produce most of the regions proscuitto. We sat in a “restaurant” of one of the smokehouses and munched on fresh meat, cheese, bread and beers while playing cards on a perfectly picturesque day.

Our first day in Holland, we rented bikes (bright red again, they were warning everyone of our out-of-towner status) for a full day of Amsterdam sites, sounds and snacks. 



Bikes, delicious food (if you are in Amsterdam you must make a brunch stop at Bakers and Roasters for a Kiwi style meal) and touring a stunning city with my brother and my sister was pretty much ideal the recipe for a delectable day.

But enough rubbing your nose in my amazing trip.

The places we visited could not have been more opposite. One was a remote sea village with little population and few outsiders. The other a bustling metropolitan city full of international citizens hustling and bustling about.

However they did have one major thing connecting them.

Fish. Both countries are surrounded by water in one way or another and because of this fish is a major part of their cuisine.

So to honor one of my favorite proteins and two of my new favorite places, I’m serving up some tasty salmon.

The combination might seem odd, but it flows. The cauliflower brings meatiness to the dish and the pickled veggies on top brings a light tang to the mix.

If you can’t pop of to Europe any time soon, you should get in the kitchen and whip this up as a consolation.

You will need…

4 salmon filets, about 6 ounces each (skin off or on depending on your preference)


3 tablespoons olive oil, divided
2 tablespoons butter, divided
1 lemon, thinly sliced


½ cucumber, quartered and thinly sliced


6 radishes, julienned


1 fennel bulb, quartered and thinly sliced


2 tablespoons champagne vinegar


1 head cauliflower, chopped into florets


Salt and pepper to taste

Start by preheating your oven to 425 degrees F.

In a medium bowl, toss together the cauliflower, 1 tablespoon of olive oil and salt and pepper.


When the cauliflower is lightly coated, spread it out onto a rimmed baking sheet and roast until browned and tender, 30 to 40 minutes.


After the cauliflower has roasted, combine the veggie with 1 tablespoon butter in the bowl of a food processor and blend until completely combined and smooth. Season with salt and pepper to taste.


While the cauliflower is roasting, combine the cucumber, radish and fennel in a medium bowl and toss with the vinegar and salt and pepper. Set aside for at least 30 minutes, stirring every 10 minutes.

As soon as the cauliflower is out of the oven, heat the remaining olive oil and butter in a large oven safe pan.

Pat the salmon dray and season well with salt and pepper. When the butter and oil are hot and bubbly, add the salmon to the pan (non skin side down if your fish has skin). Sear the fish until it is no longer sticking to the pan and it is easy to flip. About 3 minutes.


After flipping, top each piece of fish with a slice of lemon and place the pan in the oven.


Finish the fish in the oven until just cooked through. About 8 minutes.

Place about ½ cup of the cauliflower mixture on each plate and top with a piece of fish fresh out of the oven.


Top with a large spoonful of the pickled veggies and serve hot.

Grilled Chicken with Cucumber and Peach Salsa

I want to take a second to give a little love to the unsung hero of this here blog.

For a long time, all the magic happened because I made it happen. Of course I’d get help from visiting dinner guests or family members, but for the most part I was running around the kitchens I’ve cooked in like a chicken with my head cut off.

But these days things are easier and down right prettier because Wes does everything he can to help me.

From dicing things to perfection, to hitting the grill when I have too much going on to snagging the camera when I need seven hands. He does it all.

He does it all AFTER working his butt off for ten hours a day.

Finally, all his hard work and selflessness has paid off. He got a great promotion at work after years of dedication and hard work.

Congrats my love! You deserve it!

In your honor, I will call you and demand that you tell me what to make for dinner and then freak out and have you help me chop things.

Thanks for working so hard and keeping all together!

You will need…

4 chicken breasts, pounded thin


1 tablespoon olive oil
2 tablespoons peach preserves


½ cup cucumber, peeled and chopped


1 tablespoon fresh mint, finely chopped
3 tablespoons red onion, diced


2 large ripe peaches, peeled and chopped


Salt and pepper to taste

Start by combining the preserves, cucumber, mint and onion in a medium bowl.


Season with salt and pepper and let the flavors combine for 30 minutes to 2 hours.


Preheat the grill to a high heat.

Gently brush the chicken with olive oil and season well with salt and pepper.


Grill the chicken until it has good grill marks and is cooked through. About 4 minutes a side.

When the chicken is cooked through, top with 2 tablespoons salsa and serve hot.

Bison Cheddar Burger with Crispy Shallots and Pickled Cucumbers

Something is wearing me down. It’s either my old age, my over scheduling or both.

I’ve always been pretty good about remembering events and occasions with out much help. But lately since I’ve been so booked up (not complaining because I love it, just saying) that I’ve taken to using the calendar on my phone. You know, just to be safe.

So I was downright shocked yesterday at three-thirty in the afternoon when I realized that I was supposed to be at a party two hours ago and that the party was now over. Even though I had used my calendar, I had set it for the wrong time.

Dummy.

Literally did a forehead slap.

I felt HORRIBLE. Not only do I have FOMO, I really hate to let people down.

Luckily, my friend Lindsey is wonderful and understanding and forgave me as soon as I explained what happened. Good thing, because she doesn’t eat meat and it would have been really hard to win her forgiveness with this tasty burger.

You will need…

1 cucumber, peeled, seeded and julienned


½ cup white wine or other tasty vinegar


5 large shallots, very thinly sliced
1 cup olive oil
1 ½ lb ground bison


½ onion, grated


1 teaspoon onion powder


1 teaspoon garlic powder


1 teaspoon paprika


1 tablespoon Worcestershire sauce
6 ounces sharp cheddar, shredded



2 cups baby arugula


4 brioche buns (or other soft roll), lightly buttered and toasted


Salt and pepper to taste

In a large bowl, combine the cucumber and vinegar and season well with salt and pepper. Set the cucumbers aside to pickle, stirring every so often. Let them sit for at least 1 hour and up to over night.


In a large bowl, combine the bison, onion, onion powder, garlic power, paprika and Worcestershire sauce. 


Combine the mixture well and season well with salt and pepper.


Divide the meet into 4 equal sections.


Separate 1 of the sections into to parts and flatten each out into a patty. Fill the center of one of the patties with a handful of cheddar and top it with the other patty. 


Form the two patties into 1 large patty filled with cheese. Set it aside and repeat with the other 3 sections.


Heat your grill to a high heat.

Lightly oil the burgers and grill them until they have good grill marks and are cooked through. About 6 minutes a side.


While the burgers are cooking, heat the oil over medium high heat in a large skillet. When the oil is very hot, add in the shallots and fry until golden brown and crispy. 


Using a slotted spoon, move the shallots to a paper towel to dry.


When the burgers are done, place them on the bun, top with arugula, crispy shallots and the pickled cucumbers and serve hot.

Shrimp Enchilada

It is pretty standard for Mondays to be a little depressing. I mean, it is really rough knowing you have a full workweek ahead of you.

But my Monday blues were multiplied by ten times today due to my post girl’s weekend depression.

My weekend with my girlfriends was hands down the best time I have had in years. YEARS.

Maybe the best time ever.

It was wonderful to just all be in the same place. Eating together, exercising together, shopping together, spilling our guts together and just basically enjoying being in one another’s presence.

So it was no shock today that I was in a deep funk.

And my way to fix a funk is to cook me some food.

These enchiladas were the perfect fix.

You will need…

1 lb shrimp, peeled, deveined and tails removed
1 teaspoon paprika
½ teaspoon ground cumin
1 tablespoon olive oil
2 cups jack cheese, grated
2 cups sharp cheddar cheese, grated
½ cup Greek yogurt
1 avocado, cubed
12 large flour tortillas
2 cups salsa verde


Salt and pepper to taste

Start by tossing together the shrimp, paprika, cumin, olive oil and salt and pepper.


Heat a large skillet over medium high heat.

When the pan is nice and hot, add in the shrimp and cook just until pink on both sides. About 2 minutes a side.



Remove the shrimp from the heat and allow it to cool for you to handle.

Preheat the oven to 350 degrees F.

Chop the shrimp into bit sized pieces.


Mix together your cheese and combine 3 cups in with the shrimp.

Add in the yogurt and avocado and mix to combine.

In the same pan you cooked the shrimp in, heat the salsa verde over medium heat.

When the salsa is warm, dunk a tortilla in it and toss it with the salsa just until it is damp.


Move the tortilla to a 9 x 13 inch, lightly greased, oven safe dish. Scoop about ¼ to ½ cup depending on the size of your tortillas. Roll the filling up in tortilla and slide it to the end of the dish.

Continue this process with the remaining tortillas and filling.



When all the tortillas have been filled, drizzle the enchiladas with the enchilada sauce.

Top with the remaining cup of cheese and bake in the preheated oven until the cheese is bubbly and the enchiladas are hot throughout.

 

Remove from the oven serve hot.
