It is that time of year. That time of year when I do everything in my power to cook pretty much everything on the barbeque.
Fish.
Peaches.
Bread.
Watermelon.
Everything.
There is something spectacular about being outside manning the grill and that amazingly awesome flavor that barbequing gives your food.
Oh yeah, and there are pretty much no dishes. Score!
You will need...
1 tablespoon olive oil
1 1/2 pounds summer squash, pealed and halved
1 onion sliced 1/2 inch thick
1/2 cup fresh grated Parmesan
1 cup chopped cilantro
1/2 cup chopped mint
1 lemon, zested and juiced
Salt and pepper to taste
Start by preheating your grill to medium high heat.
Lightly brush the summer squash and the onion with the olive oil and season them with salt and pepper.
Grill the onions and squash over a hot spot on the grill.
Cook until they both have nice score marks on both sides. About 7 minutes a side.
Remove from the heat and let the veggies cool enough to handle.
When they have cooled, chop them into bite sized pieces.
Toss the cilantro, mint, Parmesan, lemon juice and zest.
Serve warm or cold.
