My dog ate my
homework.
My computer crashed.
A tree fell down and
knocked out the power at just my house.
All of those would
have been great reasons for why I have been a bad blogger lately.
But the truth is, I’ve
just been busy having a really good freaking time.
Summer is in full
effect in southern California and I’ve been living it up. I’ve spent a ton of
time out doors and celebrating promotions, graduations and engagements.
And, celebrating the
sun by riding my bike everywhere and spending hours outdoors.
None of those things
are conducive to cooking/writing/stopping for a second to do anything but
enjoy.
Now Monday is back,
and so am I.
And since summer is
such a great time to celebrate, I thought I’d share an awesome appetizer for
entertaining.
You will need…
1 French baguette,
sliced into ½ inch thick pieces
2 tablespoons olive
oil
2 ripe pears, thinly
sliced
1 cup crumbled blue
cheese
2 tablespoons honey
Start by preheating
your oven to 400 degrees F.
Arrange your baguette
slices on a baking sheet and lightly brush them with olive oil.
Pop them in the oven
and bake until they are golden and crisp, about 10 minutes.
Then, place a slice of
pear on each crostini and top the pear with a small spoonful of blue cheese.
Add them back into the
oven and bake for an additional 3 to 5 minutes. Just until the cheese has
started to melt.
Finally, drizzle the
honey over the tops of all your crostinis and serve hot.
