Honey Lime Grilled Chicken

With the social media frenzy going on these days, I’m feeling a little overwhelmed.

Every week I feel like someone is telling me I have to join some new social networking site. Like. HAVE. TO. JOIN.

I don’t know about you, but I don’t have time to tweet, status update, pin a photo, link in, and instagram.

And eat, sleep and breathe.

Priorities people.

Lately, I’m really feeling the pressure to have every photo be perfect.

But that silly. I’m a food blogger. Not a food stylist. And this piece of chicken might not be perfectly staged, but it tastes damn good.

So there.

You will need…

¼ cup olive oil
Zest of 2 limes

¼ cup freshly squeezed lime juice (about 2 limes)

2 tablespoons honey

1 tablespoon cayenne pepper

1 teaspoon salt
1 teaspoon pepper
2 pounds of boneless skinless chicken breasts

Start by combining all of the ingredients in a large zip top bag.

Seal the bag tightly, with most of the air out of the bag and shake so that the mixture is completely combined.

Let the chicken marinate for at least 30 minutes, but up as long as over night.

When you are ready to cook, heat your grill or sauté pan (with a little bit of oil in it) to a medium heat.

Grill the chicken for 6 to 7 minutes per side for a thicker chicken breasts.

If you breast is ½ inch or thinner, cook for about 3 to 4 minutes a side.

Remove from the grill and serve hot.
