Marinated Cucumbers

How good is a juicy peach on a hot summer day? What about a juicy steak and a nice glass of red wine? Kissing the rain?

Ok, that last one was super cheesy.

But, my point is that some of the best things are super simple.

We have a family friend who is part of our aquatic world. I swam and played water polo with their daughter and both their younger boys played with Albert and Josh. Their mother is notorious for making amazing food.

I only had the pleasure of going to their home once for dinner, but she made something similar to this for me and it always stuck with me.

It’s cooling, tangy and light. Oh, and it only takes about five minutes.

Quick and delicious. Just what I’m looking for in a weeknight dish.

You will need

1 large cucumber


¼ cup sesame oil (preferably toasted)


¼ cup red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon salt
1 teaspoon fresh pepper
¼ cup toasted sesame seeds

Start by slicing the cucumbers as thin as possible. The thinner you cut them, the more flavor they will absorb.


When you have cut the cucumber, place them in an even layer on a large platter.

Next, whisk together the oil, vinegar, mustard, salt and pepper and then pour the mixture over the cucumbers. Do your best to drizzle all of the cucumbers.

Sprinkle your sesame seeds over the top and serve.


Simple pleasures.
