Sesame Kale and Cabbage Salad

Monday, Monday, Monday.

Where the hell did you come from?

There were supposed to be two days between you and Friday, but I’m pretty sure I blinked at five on Friday afternoon and you were back.

I thought we talked about this? You better correct your behavior for next week.

But thank you for bringing back The Bachelorette tonight. And thank you for this yummy salad.

You will need…

2 cups shredded green (or red) cabbage

2 cups finely chopped kale

2 cups shredded carrots

4 green onions, chopped

½ cup sesame seeds
2 tablespoons olive oil
2 tablespoons rice wine vinegar

3 tablespoons lemon juice

1 tablespoon honey
2 tablespoons soy sauce
2 tablespoons sesame oil
Zest of 1 orange

Start by combining the cabbage, kale, carrots, and green onions in a large salad bowl. Toss the combo well.

Top the mixture with the sesame seeds and set it aside.

Then, in a food processor or small bowl, combine both oils, soy sauce, honey, lemon juice, orange zest and vinegar and whisk or blend until it is completely combined.

Drizzle over the salad, toss and serve.
