"Fancy" Crab Salad

I know that you are no stranger to the fact that I love to make things that sound fancy and look fancy but are super easy.

In fact, my main goal in the kitchen is to make things that look “fancy” while putting in minimal effort.

Well, I consider not actually having to cook anything a great example of minimal effort. The only thing involved in making this dish is mixing and chopping. And not the kind of mixing and chopping that gives you an arm workout.

Sorry, you will still have to hit the gym after this one.

You will need…

For the Crab Mix:
1 8oz can of lump crab meat


2 tablespoons mayonnaise
Juice of 2 whole lemons


Salt and freshly ground black pepper
2 teaspoons chopped fresh tarragon leaves


1 tomato diced


2 avocados, pitted and chopped


4 cups arugula or baby lettuce mix
Chopped chives or green onions, for garnish

For the Dressing:
¼ cup olive oil
1 tablespoon whole grain mustard
Juice of 1 lemon
1 teaspoon salt
1 teaspoon pepper

Start by mixing the crab meat, mayonnaise, lemon juice, tarragon, tomato and avocado in a medium sized bowl. Season the mixture with salt and pepper to taste and put it in the fridge to get nice and cold.


In a second bowl, whisk together the olive oil, mustard, lemon juice salt and pepper.


Divide the greens evenly among 4 plates and drizzle them lightly with the dressing.

When the crab mixture is nice and cold, place a generous scoop of the crab mix on top of the bed of greens.

Top with your chives or green onions (whichever you have) and serve.


Impressive right?
